Order of the Universe

Kaare Bursell

Kaare's initial attraction to practicing a macrobiotic way of life was its description as "Living in accord with the order of the universe." Kaare has spent many years investigating the meaning of this subject and will give a detailed account of what he has learned so far. Kaare will explore the "Order of the Universe"as it relates to the individual human being and what it means in regard to everyday life.

Comprehensive Visual Diagnosis

Warren Kramer

Many long standing cultures around the world understood that the outside of the body is a reflection of what is going on inside. This enables a person to see the "direction" one is going in with one's health and make appropriate choices in diet and lifestyle. In this participatory workshop, Warren will explore a number of ways to see one's health and shift the direction if need be.

To Begin: Way of Life Studies

The 2017 Health Classic presents its "Way of Life Studies" program for participants desiring a beginning to intermediate level of study. Led by senior teacher Kaare Bursell, "Way of Life Studies" courses are marked with an • on the back of the brochure. They include "On Being Healthier," "Introduction to Yin/Yang," "Visual Diagnosis," "Macrobiotic Approach to Disease," "Introductory Macrobiotic Cooking," "Home Remedies," and a "Way of Life Studies" panel.

Stress Reduction, Massage & Exercise Classes

The 2017 Health Classic offers a comprehensive program of stress reduction and fitness courses throughout the Classic. Experienced fitness instructor Anna Shay McEntee teaches "Stress Management and Breathing," "Energy Break for Prolonged Periods of Sitting," "Barefoot Shiatsu," "Tai-Chi," "Pilates," and "Yoga." Shiatsu therapist Pamela Buonanotte presents two hands-on, participatory "Shiatsu Workshops." Acupuncturist Rachel Petkus teaches "Qi-Gong," "Thai Massage," and "Yoga." Experienced insturctor Vesna Cupara-Peters teaches the ancient art of "Do-In." every year.

Herb Walk &Nature Walk

Join two of California's most knowledgable naturalists, the founder of the KUSA seed foundation Lorenz Schaller and noted herb educator Lanny Kaufer for educational, fun-filled walks through the fertile grounds and surrounding trails of La Casa De Maria. On Friday, Lorenz leads a walk, exploring California's South Coast's native habitat. On Saturday, during his "Herb Walk," Lanny will show herbs that have multiple uses for survival, crafts, home remedies, gardening, ceremony, fiber-making and wildcrafting. Lanny will present a slide show after the walk.

In Context - Extended Study: Taking Your Health to the Next Level - Warren Kramer

The Health Classic presents a program for extended, in-depth study with a leading thinker and teacher in the natural health field each year. This year, senior macrobiotic teacher Warren Kramer presents "Taking Your Health to the Next Level." One of the most common resolutions that people make at the beginning of every new year is to be healthier. Why is it that before the end of January most people have already given up on their goal? What does it really take to create that shift? Warren will show participants how to transform one's health and well-being while considering all aspects that go into creating dynamic health.

Ronald Peters, M.D., M.P.H.,
is trained in family medicine and has earned a Masters of Public Health in the prevention of disease. He has thirty years of experience in nutritional biochemistry and holistic health care. Dr. Peters has studied with Master teachers, leading to an understanding of the formative power of the conscious and unconscious mind, which he summarized in his ground-breaking book, Edgework, Exploring the Psychology of Disease. His approach to patient care is to restore the natural wisdom of the body and then assist patients in changing their lifestyle and mind-style factors that contribute to illness. Dr. Peters practices medicine in Scottsdale, Arizona and is the founder of the MindBody Medicine Center.

Gordon Saxe, M.D., P.h.D.,
is both a Preventive Medicine physician and a nutritional epidemiologist and has been trained in a number of complementary disciplines. He is a founding member of the University of California, San Diego Centers for Integrative Health, Director of the UCSD Center for Integrative Nutrition, and Chair of the Research Executive Committee of the Krupp Endowed Fund for Integrative Medicine Research. Dr. Saxe is well-known for his pioneering work in the combined use of a whole food, plant-based diet and mind-body stress reduction to control the progression of advanced prostate cancer. He is Board certified in Preventive Medicine and a Fellow of the American College of Nutrition.

Catherine Albanese, Ph.D.,
is the J.F. Rowny Professor Emerita in Comparative Religion and Research Professor in Religious Studies at the University of California, Santa Barbara. She has written numerous books and articles in her field and is also a former chair of Religious Studies at UCSB. Dr. Albanese has graduated from all four levels of the Kushi Institute Leadersthip Certificate Program and is a Kushi Institute Associate Teacher and Counselor.

Dale Figtree, Ph.D.,
has been a Nutritional Health Practitioner for over twenty years and an artist since childhood. She has a private nutritional consulting practice in Santa Barbara. Dr. Figtree presents seminars throughout the United States and Europe and is the author of two books, Health After Cancer and Eat Smart - A Guide to Good Health for Kids, and a DVD/ video, The Joy of Nutrition.

Warren Kramer is an internationally recognized macrobiotic counselor, lecturer and cooking teacher with over thirty years of experience. He is a faculty member of the Kushi Institute and the Strengthening Institute. Warren currently teaches in ten cities in the United States and abroad. He and his wife Fatima run the Macrobiotic Center of New England.

Kaare Bursell was born in Kenya and became a veterinary surgeon in England. As a result of his clinical experience in a large animal practce, he realized the inherent flaws in modern medicine and found a more realistic approach to health and disease in macrobiotic practice and philosophy, studying at the Kushi Institute. Kaare is a full-time counselor and resides in Carson City, Nevada.
